free online college courses



While on my way into work yesterday I was listening to my normal station, NPR and came across this beneficial story. I had to share!
Coursera, is a website that allows you to sign up for free online courses from stop universities like PENN, Stanford, and Princenton. No books just online lectures, quizzes, tests and discussions.

I am signing up for a couple and will share my exeprience. I have been out of the classroom since 2005 when I earned my BA so this will be a great way to ease back in and to see if I'm really going to pursue a Masters. What an innovative idea!

This should be fun!

Parenting through it...

I had a very enjoyable Friday with a work friend to end what felt like the longest most trying week in my parenting history (I know it's only been 6 years and there are more challenges to come). Goodness, it's so hard to express how you feel when you pour all your good stuff into your children and sometimes how they translate it doesn't go how you hope. It can be exhausting. I know that with God and my family the boys will be ok and so will I. I thank God for patience and understanding and strong resilience. 

Without the hard times we wouldn't appreciate the great times. 

 This picture is a beautiful interpretation of woman, naturally, and makes me want to take some time for me...do my hair, do my nails, sip some tea and relax. 

 I deserve it!

Ready for Spring


I think the warm weather today is making me crave spring and boy when it comes I will be ready. I'm sad that we didn't have a major snow storm this winter- no sledding, snowball fights or building snowmen.
Since we didn't, the sun and warmth I am eagerly awaiting.
No more dreary grey days.

Here are some of the things I will be enjoying this spring... not all at once of course.

Just Sinful

Last week, Walgreens had their Sinful Professional Nail Colors on sale for $.99 and I stocked up.
These will add a punch of color to my spring and summer wardrobe.

These polishes are budget friendly and with the addition of a base coat and top coat will make for perfect manis and pedis!!

I can't wait for warmer weather.

working out is my new bestie!!!

I found this really great blog with wonderful workout plans, recipes and advice (motivation) for those who may not have a gym membership (cancelled mine because I wasn't going) and are just getting started or those who want to switch it up a bit...

I even love the design.

I must shed this weight! I have printed off all the plans and can't wait to get started. Each day you do different workouts and buildup little by little.

There are tons of great ideas and fun printables!

Just in time for Mother's Day!!!

I went to the library last night with the family after dinner and came across this great book of poems by Maya Angelou entitled Mother, A Cradle to Hold Me.

Each day until Mother's Day I will ramble off one of the poems...

I have clothes eveverywhere. Clean clothes, dirty clothes- questionable clothes, winter clothes, spring clothes. Clothes in drawers, closets and on the floor!

Looks like I will be having a clothes folding party tonight!! I just can't seem to stay on top of my laundry.

Thunder Cake ...oh MY!!!


My son came home Friday and all he could talk about was the Thunder Cake he made in his afternoon class at school. This cake is based off a children's book, Thunder Cake by Leah Polacco,  that his teacher read to them during the week. They all came together to make the cake in class and all took a piece home on Friday.

He said it had butter, eggs, flour and tomatoes...I said tomatoes???? I quickly looked up the recipe as he is pleading to make one at home and of course I never turn downan opportunity to try a new cake recipe. I am always excited to support his enthusiasm for learning and of course my enthusiasm for cooking/baking...smile!


Here is the recipe and be sure to check back as I will share our Thunder Cake baking experience in a later post...

Pre-heat oven to 350 degrees.

Cream together one at a time:
1 cup shortening
1 3/4 cup sugar
1 teaspoon vanilla
3 eggs, separated
( blend yolks in. Beat whites until they are stiff, then fold in.)
1 cup cold water
1/3 cup pureed tomatoes

Sift together:
21/2 cups cake flour
1/2 cup dry cocoa
11/2 teaspoons baking soda 1 teaspoon salt

Mix dry mixture into creamy mixture. Bake in two greased and floured 8
1/2 inch pans at 350 degree for
35 to 40 minutes. Frost with chocolate butter frosting. Top with strawberries.

By encouraging the young Patricia to ignore the approaching storm, the two wander outside to gather the ingredients for Thunder Cake, the perfect recipe for a rainy day. After the cake is in the oven, Grandma recounts the day’s events, convincing Patricia that only a "brave" girl would climb out from her hiding spot to collect eggs and tomatoes, milk the cow, and venture through Tangleweed Woods to the dry shed. Realizing that her grandma is right, Patricia welcomes the storm and a warm slice of Thunder Cake, never again to fear the "voice of thunder."

Mommy Fabulous Thursday

Motherhood is such a blessing...

Sometimes I think about the times when I wasn't a mother and it's really hard to imagine. The boys bring me so much joy...my heart remains full!!

Every Thursday, I will feature a mom (or mom to be) that is simply FABULOUS in my eyes (even if they have their own glam squad)!!

My first feature is Mrs. Paula Patton (Thicke), actress, and wife of R&B swooner Robin Thicke!!

She is simply radiant. I can't wait to see their bundle of joy!!
